Peri-peri Prawns

Fresh flavours pf sunny seas are imminent in this dish,and that is why it is one of my favourites to make. It allows for some rather awesome escapism in any form you wish it to be.My thoughts travel to ocean spaces and wide places.

For me, prawns (fresh) are a reminder that fruits really do lie in the sea. 



Peri-Peri Prawns 

Prep: 5min     Cooking Time: 25min   Serves: x6

Ingredients:
  • Olive oil (good glug)
  • 2 red chillis (chopped)
  • 2 handfuls finely chopped garlic
  • handful fresh thyme
  • 250ml white wine
  • Juice of 2 lemons
  • 1 tsp cinnamon
  • 2 knobs of butter
Method:

In a large saucepan, add a good glug of olive oil. Add the chopped garlic and chillis and allow to cook for 5 min, releasing the flavours.Add the thyme. Add the whole prawns and place a lid on your saucepan. Allow to cook for a few minutes before adding the white wine. Bring to the boil slightly and add the lemon juice, add the cinnamon and stir through. Add the butter and mix well until melted. When the prawns have turned pink and the shells are soft, remove from the heat and serve.
